My Picante Recipe is yours Free....
Ever wish you could capture some
of the summer sun's warmth, and savor the heat during the cold winter?
If you can grow tomatoes, peppers and onions; you can do just that!
Here's how....
Pick yourself a big batch of peppers, tomatoes
and onions. Get out your blender, salt, garlic and favorite paring knife
- Using a food processor blend the tomatoes into a thick
sauce. Do not over-blend, you don't want a tomatoe juice.
- Add in 3 to 5 dried cayenne peppers as you blend the
tomatoes.
- Fill a 3 quart glass pan 2/3 full with the tomatoe
sauce.
- Add 1 table spoon of salt, and 2 table spoons of garlic
salt.
- Put on a low fire to simmer.
- Chop up two large white onions, and stir into the
simmering sauce.
- Chop 10 - 15 large jalapenos and stir into the simmering
sauce.
- Put the lid on the pan and let it low boil for 2 hours.
Adjust the heat and stir as needed to keep from scorching the sauce.
- Depending on the water content of you tomatoes, after
the first hour may want to ladle off the excess clear liquid.
- TIP #1
> This liquid makes excellent soup stock!
- After 1 1/2 to 2 hours remove from heat, and "can"
the picante into jars, or you can freeze the picante in freezer bags.
- TIP #2>The
picante is hot enough right off the stove, to go straight into canning
jars and the heat will seal them.

Let the picante cool, and enjoy it with
chips,
or my son's favorite cheese & rice!

You can do varations on my recipe, using different
types of peppers, spices and onions.
